Dining: The Stand Grows Up

In California, diners still love the all-American hot dog. But now they want it with a side of Sinatra and a glass of Silver Oak Cabernet. The lowly food stand is catering to a more grown-up palate, at least on the Left Coast. At Encino's The Stand (818-788-2700), employees in chef's whites serve up classic dogs, fresh fruit cobbler and wine by the glass. Patrons dine alfresco beneath strands of dimly lit backyard lights.

Agents are among us: Best not to make any sudden movements. Oh, and know your order before you get to the counter. This is one line of besuited sharks you do not want to hold up. Where CAA goes, brave restaurateurs follow. Next to the grassy courtyard, which at lunchtime is filled with top agents trying not to get any sod on their extremely expensive shoes, is the entrance to this outpost of the popular Encino spot, not visible from the street but open to anyone who knows it's there. Inside, the walls are completely covered with signs (ordering suggestions! quotes from Warren Beatty!), and the busy room is loud. To one side, three men in designer suits laugh with (not at) the client wearing a T-shirt that says "Muthaf---a." Those women talking about how men can still be immature at 30?
